CONCH FRITTERS (Servings:  2 Dozen)

2 cups ground conch
1 tbsp grated onion
2 tbsp grated sweet pepper
1 cup flour
1 ½ tsp baking powder
1 tsp salt
¼ tsp black pepper
1 hot pepper if desired
2 cups water

Clean conch by peeling off outer dark skin.  Rinse in lime water.  Cut conch into chunks and combine with onion and sweet pepper.  Pulse grind conch mixture in a food processor until a coarse mixture is formed.  Add remaining ingredients to create a batter.  Beat until smooth.  Heat oil and drop batter by teaspoonful in hot oil – fry until brown. 

Drain on paper towel, serve hot.
