TOMATO MOZZARELLA PIE (Servings: 8)
1 pie crust (ready-made or homemade)
4 med. tomatoes
1 cup fresh basil
4 cloves garlic
½ cup mayo
¼ cup Parmesan
1 ½ cup mozzarella
pepper
Bake crust if necessary. Sprinkle with ½ cup of mozzarella. Cut tomatoes into wedges and drain. Arrange on top of cheese. Chop garlic and basil. Sprinkle on top. Combine remaining mozzarella, mayo and Parmesan cheese. Season with pepper. Combine tomatoes with mixture. Bake at 375° F for 35-40 minutes.
